Sweet Potato and Mango

So good to see you again.  Last weeks cocktail was a little too mainstream for me.   So this week, we are going a bit over the border;  to  South-America!  There they make different sweets and desserts with the sweet potato… and there is where I found my inspiration for this weeks cocktail.

Sounds weird like a lot of other stuff we’ve made, but if you’ve been following for a while you’ll know it will taste amazing.  It’s all about unusual combinations;  the creation of a great piece through the unexpected collaboration of very different and unlikely parts  like Jay-Z with Linkin Park.

 

Sweet Potato & Mango

What you will need:

  • Sweet potato
  • Ripe mango
  • White sugar
  • Soy sauce 
  • Gin
  • Black pepper
  • All spice
  • Pineapple juice
  • Sage leaves
  • Lemon juice
  • Dumante liqueur

It’s a long list, but we will use most of it to create the puree you will use in the cocktail.

Let’s cook;

Peel the sweet potato and cook until soft.
In a blender or food processor, put:

  • 3 oz. of ripe mango (peeled)
  • 2 oz. of cooked sweet potato 
  • 4 oz. of white sugar
  • 1 table spoon of all spice( or to taste)
  • 0.25 spoon ground black pepper
  • And just a dash of soy sauce

Blend until smooth.

Prepare the glass and garnish.

If you have an atomizer, it’s time to use it, spritz a coupe glass with Dumante liqueur.  If you don’t have an atomizer just rinse the glass.

Garnish- Cut a mango wedge in the back so you can place it on the glass, and cut almost to the end 3 cuts in the mango wedge, smack 3 sage leaves and place them in the cuts, if you are too lazy, garnish just with the smacked sage leaves.

Let’s shake it - In a shaker put:

  • 3 spoons from the puree
  • 2 oz of gin
  • 1 oz of pineapple juice
  • 0.75 oz of lemon juice 

Shake with ice until cold.
Double strain into the glass.
Place the garnish.
Finish with another spritz of Dumante liqueur.

I know it’s a bit of a hassle to handle with all the pre-making, but once you try it you will say it was worth it.
